FOOD ALLERGIES AND INTOLERANCES: TWO DIFFERENT REACTIONS, TWO DIFFERENT SOLUTIONS

 FOOD ALLERGIES AND INTOLERANCES:
TWO DIFFERENT REACTIONS, TWO DIFFERENT SOLUTIONS
NEW YORK, May 13, 1992 -- Many Americans believe they are allergic to dairy products such as milk and cheese when in fact they are really lactose intolerant, said Ann Coulston, senior research dietitian at Stanford University, during a luncheon presentation to food authorities at New York's Doral Park Avenue.
According to Ms. Coulston, food allergies occur when the immune system reacts to an ordinarily harmless substance in food such as a protein, as if it were an invading germ. On the other hand, food intolerances, such as lactose intolerance, are caused by a physical response to food or a food additive. Common symptoms of lactose intolerance include abdominal pain, gas, bloating and diarrhea.
"When a person suffers from a food allergy, the only solution is to avoid the food. With lactose intolerance, the offending food can be eaten when certain precautions are taken, such as using a natural, dairy digestive supplement like Lactaid (R)," Ms. Coulston said.
For people who experience lactose intolerance, the use of a natural supplement such as Lactaid works to replenish the digestive enzyme, lactase, that makes dairy foods more digestible.
Many people who know they are lactose intolerant will remove dairy products completely from their diets in order to avoid the discomfort. However, these people may be missing out on necessary nutritional benefits like calcium.
"Of major concern in today's society, particularly among women, the need to consume an adequate amount of calcium to prevent or slow the rate of bone loss or osteoporosis. For those who are lactose intolerant, the use of a supplement like Lactaid makes it possible for them to meet dietary-calcium requirements," Ms. Coulston said.
Coulston demonstrated how Lactaid products can be used in recipes that were created by Saturnia chef Derrick Dikkers. Lactaid (R) Milk was used in making angel hair pasta with prosciutto in basil cream sauce. Lactaid Drops, which are used to treat cream 24 hours before cooking, were used in making grilled chicken with chicken mousse and mushroom stuffing.
There also are non-dairy products that contain lactose in the form of "nonfat milk solids" or "whey." Hidden sources of lactose include breads, pastries, liquid or powdered diet formulas, french fries and hot dogs. Chewing or swallowing Lactaid (R) Caplets before a meal makes these products more digestible. Lacaid Caplets also are a natural convenient solution for people who are eating away from home and are unable to prepare their own recipes.
Consumers can call the Lactaid toll-free hotline by dialing 1-800-LACTAID, Monday-Friday, 9 a.m. - 5 p.m. EST. Lactaid products are marketed and sold by McNeil Consumer Products Company, a member of the Johnson & Johnson (NYSE: JNJ) family of companies.
