Dish of the day.

Extra-special beans on toast

(Serves 2)

You need:

6oz piece Revillo chorizo sausage, (skin removed), halved and cut into 1cm, (1/2in), slices. 1 small red onion, peeled and sliced.

1 red pepper, deseeded and cut into 1cm, (1/2in), cubes.

pinch dried chilli flakes.

1 teaspoon fennel seeds.

1 x 410g tin butter beans in water, drained and rinsed (cannellini beans can be substitutes for butter beans).

1 x 400g tin chopped tomatoes.

2 thick slices ciabatta.

1 tablespoon extra virgin olive oil.

Salt and freshly ground black pepper.

Heat a non-stick deep-sided frying pan, add the chorizo slices, onion, pepper, chilli flakes and fennel seeds.

Cool gently for 10 minutes, stirring the vegetables into the chorizo juices.

Add the butter beans, tomatoes and 150ml, (5fI oz), of water, season with salt and pepper and stir together.

Simmer for 10-15 minutes or until the pepper is tender and the beans have softened slightly.

Meanwhile, toast the ciabatta and drizzle with the olive oil. Spoon the contents of the pan over the slices of ciabatta and serve.
