Cottage cheese fudge cookies.

They look like chocolate snowballs; the secret ingredient is cottage cheese. 2/3 cup (1/3 lb.) butter or margarine, at room temperature 1-2/3 cups granulated sugar 1 cup small-curd cottage cheese 2 large eggs 2 teaspoons vanilla 2-1/4 cups all-purpose flour 3/4 cup cocoa 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 cup chopped almonds or walnuts

About 1 cup powdered sugar

Whirl butter, sugar, cottage cheese, eggs, and vanilla in a food processor until smoothly blended; or beat with an electric mixer.

Stir together flour, cocoa, baking powder, baking soda, and nuts; add to cottage cheese mixture and stir to blend. Chill in refrigerator for 1 hour to make dough easier to handle. Form dought into 1-inch balls; roll each is powdered sugar to coat. Place balls about 1-1/2 inchces apart on buttered 10- by 15-inch pans. Bake in a 350 deg. oven until cookies feel firm when touched, about 12 minutes. Cool on racks. Serve, or store airtight up to 4 days; freeze to store longer.
