Chicago has a new beer legacy in town

Construction is in its final stages on the Chicago Brewing Co., the first new commercial brewing company to begin operations in Chicago for 50 years. Opening in April, the $3-million operation will have a 30,000-barrel capacity, making it the largest brewery in Illinois, and the only beer brewed and bottled in Chicago.

The Chicago brewer introduces its first brand, Legacy Lager, into outlets throughout the area on April 9, said Stephen Dinehart, president, Chicago Brewing.

"A traditional Chicago lager, Legacy is formulated using a century-old brewing method of crafting the beer by hand from three select natural ingredients," Dinehart said. "Chicagoans are known throughout the world for their famous pride and strength of character and it is those standards to which we open the Chicago Brewing Co. and introduce Legacy Lager."

Dinehart expects the brewery to produce at least four different beers at all times-two year-round, one seasonal and one taproom exclusive. The year-round, beers will consist of the lager and an ale. The seasonal beer line will be on a quarterly rotation and include Maibock, Weiss, Oktoberfest, and a Holiday brew. The taproom beer will feature a variety of styles, Dinehart explained.

All of the brewery's products, except the taproom brew, will be packaged in six-packs of 12-oz. long-neck bottles as well as kegs.

"We are going to produce nationally recognized beers with exceptional freshness and taste that can't be matched by imports," Dinehart concluded. "Simply put, we're brewing the best beer possible for this great city."
