California Culinary Academy.

San Francisco. The California Culinary Academy has recently moved to a grand new facility in the landmark California Hall (1912) at the corner of Polk and Turk streets, a couple of blocks north of the Civic Center. Up to 400 guests can dine in the great hall; special arrangements can be made for private parties.

From their tables, guests can view the production kitchen through a glas wall. No one tap dances, but as myriad blazing white chef's hats hurry between stainless steel and shiny chrome, you'll realize just how much choreography is required in a big production kitchen.

Lunch and dinner are served on weekdays. Classical buffets load the table Fridays for lunch, Thursdays and Fridays for dinner. Lunches cost $12.75 to $15, dinners $22.50. Reserve one or two days ahead for lunch, a week ahead for dinner--but call four to eight weeks ahead for buffets; (415) 771-3500.
