Breakfast before you know it.

Some people cook a big breakfast--pancakes, waffles, eggs and toast--even on weekdays. You can watch them on reruns of "I Love Lucy" or "Leave It to Beaver."

By and large, most of us only cook breakfast on weekends or special occasions. Most mornings, we're lucky if we have time to eat a bowl of cereal or toast a slice of bread. Washing pots and pans? Forget about it.

Manufacturers are only too happy to feed our need for speed. And they're always trying something new. Pillsbury, for example, seems bent on squeezing just about any kind of breakfast into a toaster, whether it's a bagel with cream cheese or eggs with sausage and bacon. Health-food-store waffles compete on more serious ground, aiming for the flax, soy, "gluten-free," "yeast-free," "dairy-free," "egg-free," and "GMO-free" crowd.

Here's a guide to frozen breakfast foods that you can whip up in minutes. We included some big-selling pancake mixes and batters for comparison.

A serving of our Best Bites has no more than two grams of saturated fat and 480 milligrams of sodium. Each also has at least 15 percent of a day's fiber (four grams) from whole grains or, if it's a pancake or waffle, the first grain ingredient is whole grain.

Pancakes

Whether you get your pancakes from a mix, a batter, or a box out of the freezer, you're likely to end up with the nutritional equivalent of white bread, bagels, or pasta. You don't get much protein, but you don't get much saturated fat either (as long as you don't smear butter on the pancakes or your griddle).

But some pancakes are better than others. Most companies add more calcium to their mixes (ten to 20 percent of a day's worth) than to their batters or frozen pancakes (five to ten percent). Many mixes also have less sugar.

That doesn't matter much if you douse your pancakes with syrup. But who needs the 200 calories in every four tablespoons of the sweet stuff? Try throwing some fresh fruit into the mix or batter--or make your own fresh fruit topping instead.

Most pancakes are loaded with sodium, largely because they contain not just salt (sodium chloride), but baking soda (sodium bicarbonate). If only the chloride form raises blood pressure, as some evidence suggests, those high sodium levels aren't as ominous as they appear.

Even so, we limited Best Bites to our usual 480 mg of sodium per serving, because a few brands were able to stay under that generous cut-off, even with their sodium bicarbonate. And, judging by recipes in The Joy of Cooking, sodium bicarbonate only accounts for about 100 mg of sodium per serving.

Our two Best Bites: Every Arrowhead Mills pancake mix (except the Gluten Free) and Krusteaz Low Fat Oat Bran. While Krusteaz Fat Free Buttermilk Pancake Mix and Aunt Jemima Low Fat Frozen Pancakes have enough fiber for a Best Bite, it comes from cellulose, which isn't a whole grain.

Waffles

Waffles are more likely to be whole-grain than pancakes. All the flour in Van's 7 Grain Belgian Waffles, for example, is whole-grain. And several companies--Van's, Lifestream, and Waffle Heaven--make waffles with more whole-grain than refined flour (see Best Bites on p. 15 chart).

Just don't assume that "whole grain" on the front of the package means only whole grains inside. Eggo Nutri-Grain Waffles may be "made with whole grain," but they're mostly made with refined grain. Still, the entire Nutri-Grain line beats regular Eggos any day.

Many companies have transformed their waffles into vehicles that deliver everything from vitamins and minerals to flax, soy, and omega-3 fats. Here's our take on some key waffle claims:

* Flax. Flax is a good source of omega-3 fats, especially linolenic acid, which may help prevent heart attacks and strokes--though the evidence is stronger for the omega-3s in fish oils. Look for at least 1,000 miligrams--that's one gram--of omega-3 fats per serving. (Skip brands that don't put omega-3 numbers on the package.)

* Organic. Look for brands with organic ingredients to help protect the environment.

* Soy. Soy helps lower cholesterol ... if you eat roughly 25 grams of soy protein every day. The government allows a heart disease claim on foods that contain at least a quarter of a day's total (6 1/4 grams) per serving. Maybe that's why waffles like Van's Organic Soy-Flax, which have three grams of soy protein, don't mention heart disease. Instead, Van's label says: "Studies show that soy isoflavones may slow down, or possibly reverse, bone loss." Isoflavones are estrogen-like phytochemicals that may or may not lower cholesterol. It's too early to say whether soy protein or isoflavones protects bones, lowers the risk of breast or prostate cancer, or curbs the symptoms of menopause.

French Toast

Frozen French toast is somewhat fattier and sweeter than waffles or pancakes, and sticks have more fat and sugar than slices. Whole grains and fiber are scarce, and calcium levels are mediocre. All in all, two slices of French toast are close to two slices of white bread with a teaspoon of margarine and a tablespoon of jam.

Toaster Pastries

Pop-Tarts appeal largely to kids (and to parents who think that added vitamins can turn white flour and jam--sometimes with frosting and sprinkles--into a healthy breakfast).

Frozen toaster pastries, on the other hand, are aimed at harried breakfast-eaters of any age ... too harried to think clearly, perhaps.

Most toaster pastries have either too much saturated fat (Pillsbury Toaster Scrambles and Toaster Strudels with cream cheese) or too much sugar (Toaster Strudels without cream cheese). And nearly all are low in fiber, protein, and calcium.

In contrast, Pillsbury's Toaster Bagel Shoppe line is fairly low in both fat and sugar. But it's not clear why anyone who's ever eaten a real bagel would buy them.

Breakfast Sandwiches

Most breakfast sandwiches are not kind to your heart. With eggs, cheese, and sausage (or bacon or ham) on a biscuit or croissant, it's no surprise to find 20 to 30 grams of fat, four to 12 of them saturated, in each sandwich.

Exceptions: Morningstar Farms makes two meatless Breakfast Sandwiches that are low in sat fat and are good sources of protein, fiber, calcium, and other nutrients. Unfortunately, they're also good sources of sodium (700 to 1,0OO milligrams).

Amy's Breakfast Burrito, which is filled with beans, potatoes, tofu, and onions, has a mildly spiced kick. But its 540 milligrams of sodium just missed our Best Bite cut-off.

Breakfast Meals

A breakfast pizza, for those who have never had the pleasure, is a small ordinary frozen pizza with scrambled eggs and bacon, sausage, or gravy on top. It's in the same class as Great Starts frozen breakfasts--lousy with sat fat and sodium.

New on the scene are Uncle Ben's Breakfast Bowls. They're essentially Great Starts, except your sausage, egg, and biscuit or your bacon, egg, and potatoes (or whatever) are all smushed into a bowl. The only one that isn't brimming with sat fat and sodium: Seven Grain Cereal & Fruit. It's got seven grams of fiber to offset the added sugar.

The "Whole" Truth

It's not 100 percent whole wheat, as the label implies. But it's got more whole-wheat than white flour. In the pancake mix aisle, that's tough to find ... unless your supermarket carries Arrowhead Mills or other (small) brands that only say "whole grain" when they mean it.

Blueberry Baloney

The berries in these waffles provide "potent natural antioxidants" to protect you from free radicals that "have been linked with aging and over one hundred diseases," according to the label. That's a lot to expect from waffles that have maybe two blueberries each and more salt than elderberries or bilberries.

The Grain Game

"Whole grain" on the box may not mean only whole grains inside. Check the ingredients to see if whole-grain flour is listed before "wheat," "enriched," or "unbleached" (refined) flour. Van's 7 Grain Belgian Waffles is one of the few brands that are 100 percent whole grain. Remember: "wheat" flour, even organic wheat flour, means white flour.
