Break Time: Recipe; Roasted Mediterranean Vegetables.

Ingredients (serves 4): 2 large red peppers, deseeded and cut into eight' 8 large plum tomatoes, halved' 2 large garlic cloves, crushed' 50g/2oz pinenuts' 1tbsp balsamic vinegar' 3 level tbsp capers' handful fresh thyme leaves.

Method: Preheat the oven to 220[bar]C/Gas 7.

Put the tomatoes in a roasting tin with the peppers, garlic and pine nuts. Season with freshly ground pepper and roast for 15 minutes.

Add the balsamic vinegar, capers and thyme to the roasting tin. Mix gently to combine and serve with a salad and plenty of crusty bread to mop up the juices.
