SZECHUAN TWICE-PEPPERED PRAWNS

Szechuan pepper (which actually comes from a berry) and black peppercorns are both good for calming the digestion.
INGREDIENTS
255g/9oz raw peeled king prawns
1 tsp Szechuan peppercorns
3/4 tsp salt crystals
1 tsp black peppercorns
2 tbsp groundnut oil
A large squeeze of lemon
METHOD
Place the Szechuan pepper, salt and black peppercorns in a pestle and mortar or grinder, and grind to a fine powder.
If using a pestle and mortar, sieve the mixture to remove any unground husks.
Pat the prawns dry and mix in the pepper and salt mixture.
Heat a non-stick frying pan over a medium-high heat and add the oil.
When hot, add the prawns and cook for 2-3 minutes on each side until they turn pink.
When prawns are cooked, squeeze a little fresh lemon over the top and serve.
Squid is also a good alternative for this recipe. For a vegetarian version, use firm tofu, cut into cubes.
