Ask Nadia Dear Nadia Any ideas on how I can get ahead a bit for Christmas dinner? I've got six people coming over for the big day which may not sound like that many but I've never cooked for more than two people before! Thanks Francis Wake, Devon Hi Francis Good for you for taking on the challenge! If I were you I would prep your veg and put it in the freezer as this really helps with the 'last 20-minute madness' that often kicks in. Also in my column next Saturday you will find a step-by-step guide on how to get everything on the table at the same time!

So here's how to prep and freeze your veg. Parboil potatoes (to roast) for five minutes then drain and cool them. Freeze when cold.

Then do the same with wedges of carrots and parsnips but parboil them for just three minutes, drain, cool and freeze. Then boil your Brussels sprouts for two minutes, drain and run them under the cold-water tap - this preserves their green colour. Drain well and again freeze when they're cold.
