Aseptic Processing and Packaging of Particulate Foods.

In times gone by it was merely necessary to provide a package for a food product which fitted in with the required process being was used. Such a simplistic analysis has been considerably altered by the pressure to recycle modern packaging materials and the use of new processing technologies that depend on a different style of packaging.

The idea of this text has been to bring together the various new technologies in this area, so that all can understand the needs of these latest aseptic processing techniques. Markets in the USA, Europe and Japan are discussed, and the idea of integrating packaging and processing is also examined. Ideas like microwave cooking, resistive heating and neutral aseptic handling of packaging are all discussed.

Besides the editor, eight contributors wrote the chapters entitled: Aseptic processing and packaging of food particulates; The market for aseptic products, processing and packaging systems; Packaging Materials - their properties and criteria for selection; Ohmic heating; The ERCA neutral aseptic system; Microwave processing and package integration; The Dole process; Microbiological aspects of aseptic processing and packaging; and Aseptic packaging of liquid foods.

Readers might well recognise Dole as a process that was developed many years ago. It has been included because it could well be developed to handle particulates.

Because of the nature of the text, many illustrations are included to show these latest developments and diagrams are also used to explain the systems in more detail. With everyone looking for new ideas, this text keeps you up-to-date on some of the latest thinking in the field of advanced food processing.
