This volume presents recent scientific research in the area of nutrition. Written by internationally recognized authorities, the 21 contributions cover a wide range of topics, including dietary proteins as environmental modifiers of Type I diabetes mellitus; the role of hepcidin in the regulation of iron metabolism; and cancer- associated cachexia and its underlying mechanisms. The volume concludes with a discussion of the prevalence, molecular characterization, and treatment/prevention of food allergies. Many of the articles feature color illustrations.
