A thoroughly healthy salad starts with the balance theory.

A medieval theory of medicine held that health consists of a balance among the elements; these could be expressed as fire, earth, water, and air, or hot, cold, wet, and dry. Dean Silvers' recipe is, by the balance theory, a thoroughly healthy salad. Ginger, curry, and onion are considered hot (or at least warm). The cucumber is proverbially cool, as are the apple and yogurt. The yogurt, again, is moist; mushrooms and raisins are dry (the latter by definition). Curried Cucumber Salad

1 cup unflavored nonfat or low-fat


3 tablespoons lemon juice 1 1/2 teaspoons curry powder

teaspoon ground ginger

1 European cucumber (about 3/4 lb.),

thinly sliced

About 1/4 pound mushrooms, rinsed

arid thinly sliced

2 green, onions (ends trimmed) with

tops, thinly sliced

1/2 cup raisins

1 medium-size Red Delicious apple

About 3 cups tender spinach or

romaine leaves, rinsed and


Salt and pepper In a small bowl, stir yogurt to mix with lemon juice, curry powder, and ginger; cover and keep cold. In a large bowl, combine cucumber, mushrooms, onions, and raisins. Quarter and core apple; cut each wedge in half crosswise, then thinly slice lengthwise. Add to cucumber mixture along with yogurt sauce. Mix gently; cover and chill at least 1 hour or up to 6 hours. Line 5 to 6 salad plates with spinach leaves. Stir cucumber mixture, then mound equally onto leaves. Add salt and pepper to taste. Makes 5 or 6 servings. This undoubtedly contributes to the flavor, but it also contributes to calorie and cholesterol counts. Robert House makes a chili that is loaded with flavor but carries only a small charge of fat. Low-fat ground turkey and a lone slice of bacon are the secret ingredients. You are, of course, free to raise the temperature by adding extra chili powder. Turkey Chili

1 slice bacon, diced

1 pound ground turkey

1 large onion, chopped

1 large red bell pepper, stemmed,

seeded, and diced

3 cloves garlic, minced or pressed

2 tablespoons chili powder

1 can (7 oz.) diced green chilies

1 cups or 1 can (14 1/2 oz.) regular strength

chicken broth

1 can (14 1/2 oz.) diced tomatoes


1 teaspoon each ground cumin, dry

oregano leaves, and ground


1 can (about 15 oz.) kidney beans,


Shredded cheddar cheese

Salt and pepper In a 4- to 5-quart pan over medium-high heat, stir bacon and turkey until crumbled and lightly browned, about 10 minutes. Add onion, bell pepper, and garlic and stir frequently until onion is limp, about 10
