A high price for low cholesterol.


Those of us who enjoy an egg for breakfast but have been trying to limit our cholesterol intake were initially excited to learn that poultry breeders had developed a strain of hen that lays eggs significantly lower in cholesterol. Now it appears we have been offered more hype than hope.

The 195 mg. of cholesterol in a large "low cholesterol" egg did indeed compare favorably with the 274 mg. in a large ordinary egg. The problem is that the U.S. Department of Agriculture standard for the size of a large egg has been lowered (i.e., large eggs are now smaller), so that the large egg you now buy contains only 213 mg. of cholesterol -- not much different from the 195 mg. of the "low cholesterol," and certainly not worth the large difference in price. So save money and still eat your egg for breakfast -- but limit yourself to four eggs a week.
