A LA CARTE COLD, REFRESHING GAZPACHO.

Occasionally you'll find a vichyssoise, once in a while a chilled cucumber or avocado soup, but the most common cold soup on summer menus these days is gazpacho.

This soup from Spain, relatively easy to prepare, is said by the Spanish to give a tingle to life.

There are many variations, but gazpacho is basically a tomato-based mixture of vegetables, seasoned, blended and always served chilled. Side condiments are often added.

Here are a few restaurants that produce a gazpacho worth consideration:

Back Door Bistro

Address: 101 E. Green St., Pasadena.

Phone: (626) 583-8275.

Cuisine: Continental.

Description: Chile pepper and garlic are among the seasonings added to the mix of finely hand-diced tomatoes, bell peppers, cucumber, onions and avocado. The chilled soup is a summer specialty served often at lunch or dinner.

Price: Cup $2.50, bowl $3.50.

California Canteen

Address: 3311 Cahuenga Blvd. West, near Universal City.

Cuisine: Euro-Californian.

Description: Here, the famous Spanish cold tomato soup is made with diced vegetables (tomatoes, green bell peppers, cucumbers, red onions, celery), tomato juice, lemon juice, salt, pepper and Tabasco. It's served chilled both at lunch and dinner by the bowl with a cilantro garnish.

Daily Grill

Address: 16101 Ventura Blvd., Encino. (Also in Burbank, Studio City, Universal City, Brentwood and elsewhere.)

Cuisine: American.

Description: Produced daily with freshly peeled and seeded tomatoes that are roughly chopped with cucumbers and onions, the gazpacho here has olive oil, red wine vinegar, garlic, lemon juice, water and seasonings added. It's garnished with avocado and scallions and served with the house sourdough bread.

Price: Cup $3.95 ($l less with entree), bowl $4.95.

King's Fish House

Address: 4798 Commons Way, Calabasas. (Also in Long Beach, Orange County and elsewhere.)

Cuisine: Seafood.

Description: A chilled tomato broth containing celery, tomato, onion, bell pepper, cilantro and lemon juice is served with a garnish of bay shrimp.

Price: Cup $3.95, bowl $4.95.

Le Petit Bistro

Address: 13360 Ventura Blvd., Sherman Oaks. (Also in West Hollywood.)

Cuisine: Bistro French.

Description: Both the Roma tomatoes and cucumbers are peeled and seeded before the addition of celery stalks, white onions, scallions, cilantro, garlic, olive oil, sherry vinegar, salt, pepper and Tabasco. Mixture is ground and marinated for 24 hours before tomato juice is added. Soup is chilled and served with a parsley garnish.

Price: Bowl $4.95.

Mistral Brasserie

Address: 13422 Ventura Blvd., Sherman Oaks.

Cuisine: French.

Description: Basic chilled vegetable broth made with tomato, onion, garlic, cucumber and green pepper.

Price: Bowl $5.50 at lunch, $6.50 at dinner.

Riverside Cafe

Address: 1221 W. Riverside Drive, Burbank.

Phone: (818) 563-3567.

Cuisine: Continental.

Description: Ripe tomatoes are peeled, and cucumbers are peeled and seeded. Onions and garlic are added along with chopped green bell pepper, tomato juice, balsamic vinegar, tarragon and cracked black pepper. All of this is chilled overnight and served with a mini baguette from La Brea Bakery.

Price: Cup $2.75, bowl $4.75.
