A LA CARTE; THE CHILLER KILLER COCKTAILS OF SUMMER.

The hot days and warm, sultry nights of summer call for cool, refreshing drinks.

Bartenders around town whip up some incredible concoctions to help their patrons beat the heat.

Here are a few of those chilled potions and where you'll find them:

Bob Burns

Name of drink: Burns' Long Island Iced Tea.

Description: Hold on to your seat. This cool, refreshing and enormously potent potion consists of five liquors (vodka, gin, rum, tequila, Triple Sec) mixed with sweet and sour plus a splash of cola. It's served in a hurricane glass with ice and a lemon twist garnish.

Price: $6 (Fridays $3.50).

Ca' del Sole

Address: 4100 Cahuenga Blvd., North Hollywood.

Name of drink: Campari vespa.

Description: Purplish-red campari and Stolichnaya Orange is hand-stirred on ice with fresh orange juice and a splash of cranberry juice, and the colorful result is served in a large martini glass. Very Italian and very refreshing.

Name of drink: South Bay martini.

Description: Two shots of Absolut vodka and a splash each of cranberry juice and pineapple juice are shaken with ice and strained into a classic martini glass. This cooling cocktail is garnished with a twist of lemon.

Fins Creekside

Name of drink: Fins' lemonade.

Description: Smirnoff vodka and Chambord black-currant liqueur are poured over ice into a tall glass, which then is filled with lemonade, stirred and served.

Le Colonial

Name of drink: Lychee martini.

Description: Lychee syrup is combined with Rain vodka, shaken with ice and strained into a martini glass that's garnished with two lychee nuts.

Michael's

Address: 1147 Third St., Santa Monica.

Name of drink: Michael's Ramos Fizz.

Description: This version of a famous gin drink uses Bombay Sapphire, which is mixed with egg whites, sweet and sour, orange flower water, crushed ice and San Pellegrino bottled water. The mixture is machine blended, and the cold, foamy result is poured into a 12-ounce wine glass.

Moonlight

Name of drink: The Algonquin.

Description: Fine Mount Gay rum and Mandarine Napoleon liqueur are joined with cream of coconut and pineapple juice. Blended with ice, this refreshing, seemingly innocent mixture, is served in Moonlight's tall tower glass. But watch out for its hidden punch.

2087 An American Bistro

Address: 2087 E. Thousand Oaks Blvd., Thousand Oaks.

Name of drink: Cosmopolitan.

Description: A popular drink with fashion-industry types, this cooling creation comes from an ounce and a half of Belvedere vodka, a half-ounce of Cointreau, an ounce of cranberry juice and a squeeze of fresh lime. It's all shaken well with ice and strained into a chilled, hand-blown martini glass.

Price: $7.

Yamashiro

Address: 1999 N. Sycamore Ave., Hollywood.

Name of drink: Yamashiro special.

Description: Three different rums are mixed with a trio of juices (pineapple, orange and passion fruit), then a splash of sweet and sour is added. All of this is blended with crushed ice and poured into a tall glass garnished with a pineapple wedge and a cherry.
