8 Best Summer Cocktails made with Fresh Fruit.

Fresh fruit cocktails have to be the ultimate summer bevy, though perhaps Pimm's might also be included in this elite category by anyone who's spent a balmy summer evening in the garden of an English country pub.

But that aside, it's the way the sweetness and acidity of fresh fruit play off each other that makes them such rewarding accompaniments to summer.

You don't need to be a super-star mixologist - like The Bearded Alchemist profiled in this recent column - to mix up a cooler-full of winning summer hits. Just stick to the one essential ingredient, fresh fruit.

No need for artisanal gins and obscure bitters - standard gin, rum, vodka or tequila, when combined with fresh fruit, result in magical concoctions.

A pineapple daiquiri made with fresh pineapple rather than the syrupy canned variety is a wholly different creature - invigorating and buzzing with vitality. The less said about the canned version the better.

They require a bit of preparation - buying the fruit - and a little time to prepare, but the show's part of the entertainment at a pool-side party.

So shake, stir or blend a few of these enticing cocktails for your friends this coming holiday weekend.

Hemingway Daiquiri Punch

An expansion of the renowned El Papa Doble

15 oz Caliche Rum

5 oz maraschino liqueur

8 oz fresh grapefruit juice

6 oz lime juice

Build with a lot of ice in punch bowl and stir.

Serves 5-7 people.

Fresh Watermelon Margarita

4 ounce Tequila Don Julio Blanco 12

6 ounces seedless watermelon

juice 1/4 lemon and 1/4 lime

1/2 ounce Grand Marnier

Sprig of mint for garnish

Blend together tequila, Grand Marnier, watermelon, lemon and lime juice.

Pour into shaker filled with ice and shake well.

Rim two glasses with salt or sugar

Pour in margarita mixture and garnish with mint.

Croft Pink Punch

The best summer punch I've ever tasted.

24 ounces Croft PINK Port

3 ounces Flor de Cana 7-Year Old Rum

6 ounces fresh orange juice

3 ounces fresh lemon juice

1.5 ounces simple syrup


Mix all ingredients in a tall pitcher with ice and add soda to taste; serve over ice, garnish with slices of orange, lemon, or any fruit you desire.

Makes 12 servings

Campari Cucumber Cocktail

Campari's distinctive sharp bite makes this cocktail especially refreshing

4 slices cucumber

1.5 oz Campari

3 oz gin

Juice half a lime

2 tps sugar


Muddle together lime juice, cucumber and sugar in a cocktail shaker

Add ice, gin and Campari

Shake well and pour into highball glasses

Add seltzer to taste

Garnish with cucumber wheels

Raspberry Refresher


15 fresh mint leaves

24 fresh raspberries

juice A1/2 lime

3 tps sugar

3 oz Beefeater gin

1.5 oz Cointreau

cold soda

crushed ice

Place mint leaves, raspberries, lime juice and sugar in cocktail shaker and muddle together till they're all mush.

Add Beefeater Gin and Cointreau and stir.

Pour into highball glasses filled with ice till they are two thirds full.

Stir well and add soda to taste.

Serves 2

Mint Muse

The fresh pineapple perfectly balances the tangy aniseed of the absinthe.

8 mint leaves and one mint sprig for garnish

Juice A1/2 lime, with peel chopped fine

3 oz. Lucid Absinthe

4 oz. fresh pineapple chunks

Sprite or 7-UP

In shaker muddle mint leaves, lime juice, lime piece and pineapple

Add Lucid Absinthe

Add ice and shake briefly.

Pour into highball glasses and top with Sprite or 7-UP and garnish with sprig of mint


The cayenne gives it its firecracker punch, but make sure you only use a pinch; any more and you'll be breathing fire as you dump the lot and start again.

2 oz SKYY Vodka

3/4 oz Cointreau

Juice of A1/2 lime

1 tps simple syrup

5-6 oz chunks of seedless watermelon

A pinch of Cayenne Pepper

Optional soda

Blend together watermelon, vodka, Cointreau, lime juice and simple syrup.

Pour into a shaker filled with ice.

Add Cayenne pepper and shake.

Strain and pour into highball glasses filled with crushed ice.

Top up with soda if desired.

Makes 2 servings.

Pineapple and Sage Gimlet

7.5oz Bombay Sapphire gin

3.75oz lime juice

3oz simple syrup

7 sage leaves

5oz pineapple juice

Build with ice in punch bowl and stir.

Serves 5 people.
