Yumm! gets ready for Delta opening.

Everything's coming up yummy for Cafe Yumm!, Eugene's upstart chain of rice-and-beans restaurants.

The company's newest location is scheduled to open in a week, with a soft opening set for July 13 and a grand opening July 20 for the Cafe Yumm! flagship at Green Acres Green Acre is a conference facility in Eliot, Maine, in the United States. It was founded by Sarah Farmer in 1894.

"We're putting the final touches on everything," said Ed Gerdes, the chain's secretary and general counsel.

"We are enhancing some of the popular menu items and eliminating some of the less-popular items," Gerdes said.

"Then the two existing (locations) will be converted over to the new menu board over the next couple of weeks."

Meanwhile, plans are expected to be submitted this month to building officials in Bend for the first franchisee-owned Cafe Yumm! restaurant, which also will be the chain's first outlet outside Eugene.

And training sessions are under way for workers at the new Green Acres store as well as for managerial employees at a pair of new franchises in Lane County that are expected to be under construction by the end of the year. Specific locations for those restaurants have not yet been announced.

Plans call for expansion into the Portland, Corvallis and Medford-Ashland areas, followed by various markets in Washington and California.

Gerdes said Thursday that he was not at liberty to identify the Bend franchisees, other than to say they are from Eugene and are in the restaurant business.

"They were one of the first ... to contact us when we began to franchise," Gerdes said.

"They've been longtime customers as well. They love the (Cafe Yumm!) concept, love the food, love the environment. They are business-savvy, experienced in the industry and have the financial ability to open up our first facility outside Lane County."

The Bend store will be in a building that's under construction at the Old Mill District, a shopping center shopping center, a concentration of retail, service, and entertainment enterprises designed to serve the surrounding region. The 2,400-square-foot space will be leased, with tenant improvements and equipment likely to cost about $450,000, Gerdes said.

Modeled after Eugene's new Green Acres store, the Bend location is expected to open in November.

The new Eugene store - in the Cornerstone building at the northeast corner of the Green Acres/Delta intersection - will feature what Gerdes described as "sustainability elements," such as booths made from building panels containing sorghum sorghum, tall, coarse annual (Sorghum vulgare) of the family Gramineae (grass family), somewhat similar in appearance to corn (but having the grain in a panicle rather than an ear) and used for much the same purposes.  chaff chaff

Tenant improvements and equipment are expected to cost between $400,000 and $500,000 at the Green Acres store, Gerdes said.
