Wildfish Seafood Grille Launches First Location; Restaurant Opens in Newport Beach on Nov. 14; Wildfish Will Offer the Freshest, Finest, Prime Seafood and Steaks.


NEWPORT BEACH Newport Beach, residential and resort city (1990 pop. 66,643), Orange co., S Calif., on Newport Bay and the Pacific Ocean; inc. 1906. It is a popular seaside resort and yachting center. Manufactures include electrical and medical equipment, computers, boats, and adhesives. , Calif. -- Wildfish Seafood Grille, the latest creation of restaurateurs Guy Villavaso and Larry Foles, is opening its first location on Nov. 14 at 1370 Bison Ave. in Newport Beach at The Bluffs shopping center shopping center, a concentration of retail, service, and entertainment enterprises designed to serve the surrounding region. The modern shopping center differs from its antecedents—bazaars and marketplaces—in that the shops are usually amalgamated into . The restaurant promises to offer the freshest, finest seafood and specially aged, center-cut steaks in a fun, casual, contemporary environment. Dishes are prepared by chefs who specialize in authentic preparation to develop distinctive flavors.

"Each of our chefs attends a highly acclaimed seafood school in Boston where they gather expertise on the sourcing, shipping and storage of seafood -- this allows us to be confident in our claim of providing the freshest seafood available. We selected Newport Beach for the first Wildfish location because we know how much the community appreciates exceptional seafood."

Villavaso and Foles are longtime friends and seafood lovers who also own Eddie V's Edgewater Grille, which launched in 2000 and now has two locations in Austin, Texas, and one in Scottsdale, Ariz. Bon Appetit magazine has said that Eddie V's "sets the standard for seafood." Villavaso and Foles share roots in Louisiana, and their admiration for the legendary seafood of New Orleans New Orleans (ôr`lēənz –lənz, ôrlēnz`), city (2006 pop. 187,525), coextensive with Orleans parish, SE La., between the Mississippi River and Lake Pontchartrain, 107 mi (172 km) by water from the river mouth; founded  sparked their initial interest in the restaurant industry. , is also the company executive chef for Eddie V's. He has nearly 25 years of culinary experience and has been named Atlanta's "Chef of the Year." Once the Newport Beach Wildfish location is open, the trio will begin working on a second Wildfish restaurant in Scottsdale, set to open in early 2006.

In Newport Beach, the local executive chef at Wildfish will be Steve Warner, a seafood expert who previously led the chef team at an Eddie V's location in Austin. The general manager, Damon Hovannisian, brings experience from several other high-end restaurants and is dedicated to delivering first-rate cuisine to each guest. Nearly 100 professional wait staff members will be hired who will be trained in the art of seafood and provide impeccable service.

Wildfish will be open from 4:30-10 p.m. Sunday through Wednesday, with happy hour from 4:30-7 p.m. and dinner beginning at 5 p.m. From Thursday through Saturday, the same opening times will apply and the restaurant will close at 11 p.m. On all days, the bar is open for an additional one hour after the restaurant has closed.
