Warm Almond Torta with Cherry Soup and Mint Gelato.


For the simple syrup, in a small covered saucepan over medium heat, bring the sugar and water to a boil. Reduce the heat, and simmer until the sugar is dissolved, about two minutes. Remove from the heat and set aside in an ice bath until chilled.
