Probably the most exciting additions to the new pasta menu are the risottos.

, a squid ink risotto and a risotto Milanese, but what's so special about these dishes is the rice he will use. Just outside Turin, a family business (run by husband and wife team Piero and Marianava), is producing what is widely regarded as the best rice in the world.

The rice is aged for between one and seven years and its ageing is controlled very specifi-cally. The end product is a rice that has the same nutritional value as brown rice.
