``You shouldn't feel like you're in a school,'' said Jon-Paul Hutchins, the institute's executive chef. ``This is a restaurant that takes the net away.''

Dinner is offered Monday through Friday beginning at 6:30 p.m., with no seatings after 8:15. The prixe fixe menu ($42) is a wise choice. A la carte, you'll find appetizers in the $9 range, salads for around $6, main courses under $20 and reasonably priced wines.
