The whole truth.

I'm a big fan of courtroom dramas and always listen closely when the bailiff bailiff

when I watch a person snuff snuff, preparation of pulverized tobacco used by sniffing it into the nostrils, chewing it, or placing it between the gums and the cheek. The blended tobacco from which it is made is often aged for two or three years, fermented at least twice, ground, and usually  out his or her cigarette and then walk into a health-food store for supplies; or when I'm in the checkout line at the grocery store and the person in front of me places a bag of fresh apples atop piles of red meat, sugary sug·ar·y

snacks, and a six-pack of cola. While I'm thrilled that the shopper will be eating the apples, the "whole truth" of health hasn't sunk into his or her calorie- and fat-clouded mind just yet.

There's something reassuring about the word "whole." It means there's nothing missing. Everything that's supposed to be included, is. Take diabetics, for instance. For many years, they've been instructed that they must stay away from natural sugars. Fruit juices have long been a no-no. But emerging science is revealing that, if a diabetic eats the whole fruit, his or her body responds more slowly and evenly to the natural sugars it contains and no damage is done.

God, in His infinite wisdom, created the foods that grow in the ground or hang from the trees in such a way that we receive their full load of nutrition only if we eat them whole. All those powerful antioxidants Antioxidants

, minerals, vitamins, and other healing nutrients quickly find their way into our bodies via the fiber, juices, and protective coverings of those foods. Whole grains. Whole fruits. Whole vegetables. Food as God intended. When we start isolating the elements in foods and eating them far removed from their original form, we diminish their potential for providing the nutrition we desperately need. That's what "refining" does; it separates elements into individual products. Sugar cane becomes table sugar, whole-wheat flour ends up as white flour, fruits get squeezed into fruit juices. The lowly potato is best served with its skin--even when mashed mash
