The aroma of the food being heated whets the residents' appetites, which leads to their eating better. Residents can see their meal choices and select what they want to eat at the time of the meal. The homelike kitchen equipment allows the staff to make substitutions easily. Ken Sherman: "It gives residents an opportunity to have more choices. They don't need to select from a menu. They can basically select at the time of the meal exactly what it is they feel like eating. The design makes for a very pleasant dining experience."
