Pomona Foundation, and Chef Arnulfo (Arnold) Zavalza took first prize with the Greek Taco. Criteria for the contest were taste, appearance, creativity, and nutritional content. The recipe had to serve a minimum of 25 customers and had to have a protein source. Says Chef Zavalza, "I came up with the idea of a Greek Taco after I arrived at Cal Poly Pomona and discovered that there was a large inventory of pita bread left over from a summer conference group." Congratulations to Chef Zavalza for his enthusiasm about vegan fusion cuisine and for his creative and wonderful new dish.
