The town is most famous for being the birthplace of U.S. President Franklin D. Roosevelt. campus on Thursday, May 10, 2001. The $6.7 million Colavita Center for Italian Food and Wine is a major initiative and a milestone in the 55-year history of the world-renowned college. The opening of the Center is the culmination of years of research and planning to create a world-class facility that reflects the essence of Italian culture and tradition in its architecture, interior design and gardens - as well as its cuisine. Named for the Italian-born Queen of France who brought the refinements of the Italian dining experience to the rest of Europe in the 1500s, the student-staffed Ristorante Caterina de' Medici will offer a variety of ways for the public to enjoy authentic Italian cuisine at the CIA. The Ristorante Caterina de' Medici features six distinct dining areas offering a total of 110 seats for reservations, and approximately 20 seats for walk-in guests. The Ristorante's dining rooms include the Joseph P. DeAlessandro Main Dining Room with 28-foot ceilings; the Enoteca with views into the 3,200-bottle wine storage area; the elegant Caterina de' Medici Dining Room; the casual Al Forno Dining Room; and the Tower Dining Room for private parties. Seasonal outdoor dining will be available on The Terrace, with tables overlooking the Durkee Herb Garden Plaza. The Durkee Herb Garden will provide heirloom vegetables, flowers, and herbs, allowing students the opportunity to select the freshest ingredients for use in classes and in the restaurant. Patrons will enter the Ristorante through The Marketplace sponsored by Dakota Growers Pasta Company, a comfortable lounge area displaying fresh breads, fruit, produce, and other Italian food and ingredient items. Located within The Marketplace are the Torani Bar and several small tables where patrons can enjoy hot and cold beverages or wine before dining. The Ristorante's a la carte menu showcases the authentic culinary traditions of the various regions of Italy with the seasonal ingredients and indigenous flavor profiles of this much-beloved cuisine. The opening faculty who will be directing the students in the kitchen and dining rooms are Chefs Steven Santoro and Dwayne LiPuma, and Table Service Instructors Mauro Sessarego and John Fischer. Chef and author Gianni Scappin serves as the college's Culinary Consultant to this faculty team. The Ristorante Caterina de' Medici is open Monday through Friday.
