To bring fruit into the limelight, Kline suggests an Arbor Day picnic featuring Marinated Pork and Spicy Apple Butter Sandwiches that combines fresh apple slices and apple butter with lean, marinated pork.

"Pork pairs well with many different flavors and ingredients, including a variety of fruits," says Kline. "Sweet-tart apples and lean pork are just one example of combining the sweet with the savory savory, name for any plant of the genus Satureja, aromatic herbs and subshrubs of the family Labiatae (mint family). Kline offers down-to-earth suggestions for planning the perfect picnic:
- Plan Ahead. The day before your outdoor gathering, develop an easily
transportable menu and list of supplies. In the midst of grilling pork chops,
you don't want to discover you've left your basting brush and tongs behind!

- Remain Flexible. Flexibility is a key ingredient to a successful picnic. Rain
doesn't have to spoil your day outdoors. Relocate your meal to a garden gazebo
or covered porch to continue your outdoor gathering.

- Choose a Theme. From a simple barbecue to an elegant champagne brunch,
choosing a theme - like an Arbor Day celebration - can help an enjoyable meal
blossom into a memorable experience.

- Enjoy Mother Nature. Celebrating nature is paramount to outdoor entertaining.

Recipe

Marinated Pork and Spicy Apple Butter Sandwiches
1 2-pound boneless pork loin
1 cup soy sauce
1 cup apple cider
1 garlic clove, minced
1 tablespoon ground black pepper
1 cup apple butter
1 tablespoon prepared horseradish
1/8 teaspoon five spice
12 slices whole grain bread
1/3 cup Dijon-style mustard
1 large sweet-tart apple, cored and thinly sliced
Lettuce leaves


Place pork roast in self-sealing plastic bag; mix together soy sauce, apple cider

 overnight (4-24 hours). Remove pork from marinade (discard marinade), place in shallow pan and roast in 350 degrees F. oven for 45 minutes to an hour, until internal temperature (measured with a meat thermometer) is 150-155 degrees F. Remove from oven, let rest 15 minutes.

Wrap and refrigerate any leftover pork roast. Close sandwiches and serve, or wrap securely and travel to a park or orchard to dine alfresco. Serves six.
