Either way, Mississippi's football fans know how to make a party out of fall's favorite sport. We pack our pop-up tents, fill our rolling ice chests, and throw a folding chair over our shoulders. We get to campus early and stake out our spot, setting up a spread to rival any catered buffet.

The scene is unforgettable, irrepressible. But most of all, it's portable. So whether this season promises a bowl game or just a bowl of seven-layer dip, here's a salute to the tailgating Tailgating

"That's when we wind down the weekend," Winfield says. "and start planning the next one."
DOG BONE SUGAR COOKIES

2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup butter
1 cup sugar
1 egg
1 tablespoon evaporated milk
1 1/2 teaspoons vanilla

Preheat oven to 375 degrees. Sift four,
baking powder, and salt, and set aside.
Cream butter and sugar. Add egg, milk,
and vanilla. Add flour mixture. Roll out to
about 1/8 to 1/4 inch thick, and cut into bone
shapes. Bake for about 15 minutes. Do not
overbake. Remove to a wire rack and top
with glaze. Yield: about 24 cookies.

GLAZE:

2 cups confectioner's sugar
1/4 stick margarine, melted
1/4 cup evaporated milk
1/2 teaspoon vanilla

Mix all ingredients together until
smooth and brush over cool cookies.

 at his family's tent. He, his wife Susie and her family set up next to Shoemaker Hall just outside the crush of tents and tables in that tailgating sanctity, the Grove.

After nearly a quarter century of cheering on the Rebels as "walk-on alumni," the Schnadelbachs have honed their game-day menu to a set of easy dishes that are quick and reliable. They combine purchased fare--sushi from the Student Union, chicken tenders from Abner's--with a few standard recipes that are a breeze to whip up.

"People always ask me for the recipe, and I hate to admit how easy it is," Susie says.

Setting up their spread around 7 or 8 a.m., depending on the kickoff time, the Schnadelbachs keep things simple with red-and-blue plates and napkins, along with special cups they have printed for their group.

For the Schnadelbachs, the ballgame weekend begins on Friday, when all the gear is loaded into Susie's SUV in preparation for the early-morning drive down to Oxford. Along with the pop-up tents and tables, they set up a satellite radio and settle in for the day. The group heads to the stadium an hour before kickoff and returns to the Grove to stay long after the game is over.

"We don't ever see the traffic, since we're usually among the first ones there and one of the last to leave," Rodney says.

It's been more than a decade now since Ole Miss allowed fans to drive their vehicles into the Grove for tailgating. Today, the cars and trucks have been replaced by a sea of tents in a scene widely regarded as one of the finest tailgating experiences in the country--so pleasant that a good many "Grove-sitters" don't even bother going to the game these days.

Getting a prime spot means getting there early or paying someone to set up for you.

MAGIC COOKIE BARS

1 1/2 cups graham cracker crumbs
1 stick margarine, melted
1 (14-ounce) can sweetened
  condensed milk
2 cups semi-sweet chocolate chips
1 1/3 cups coconut, flaked
1 cup pecans, chopped

Preheat oven to 350 degrees (325
for glass dish). In small bowl, combine
graham cracker crumbs and butter;
mix well. Press crumb mixture firmly
on bottom of 9 X 13-inch baking pan.
Pour sweetened condensed milk evenly
over crumbs. Layer evenly with remaining
ingredients; press down firmly with
fork. Bake 25 minutes or until lightly
browned. Cool. Chill if desired. Cut into
bars. Store covered at room temperature.
Yield: 2-3 dozen bars.

The evolution of new traditions has made for a fresh scene on game days at the Hattiesburg campus, where recent years have seen the emergence of a new student-centered tailgating area.

The District, situated in front of the Ogletree Alumni House, fills up with student tents on a first-come basis. Young families set up their tents on the outskirts of the District, stretching towards Lake Byron, while more-established alumni populate To plug in chips or components into a printed circuit board. A fully populated board is one that contains all the devices it can hold.  the reserved Eagle Club spots in the shadow of the stadium.

"The District really went from being an understated tradition to something we talk about," says Walt Denton, a Biloxi advertising executive who's been instrumental in promoting the idea.

"Sometimes we just bring up a big cooker and barbecue the whole day," Denton says. "It just depends on the mood of the day and who we're playing."

Adding family excitement to the pregame festivities, the Golden Eagle football team's traditional pre-game walk to the stadium has evolved in recent years from the "Walk of Support" meant mainly for team members' families to what is now the "Eagle Walk." The team's route now begins in the District, continues down Eagle Walk Road beneath the east side of M.M. Roberts Stadium Roberts Stadium is the name of several stadiums in the United States.

BACON WRAPPED
BREAD STICKS

1 cup dark brown sugar,
  packed
1 tablespoon chili
  seasoning mix
1 (12-ounce) package
  Oscar Mayer center-cut
  thin sliced bacon
2 packages Grissini
  rosemary flavored
  breadsticks (Alessi
  brand)

Spread brown sugar
on a tray and allow to
dry for 1-2 hours. Add
chili seasoning. Dip a
slice of bacon in sugar
mixture and wrap in
barber pole fashion
around bread stick.
Bread sticks are fragile. Place on a cookie
sheet that has been lined with foil and
sprayed with olive oil and bake 30-40
minutes in a 300-degree oven. When
sugar is caramelized and bacon is done,
remove from oven and place immediately
to a glass dish to harden.

Yield: about 24-30.

"TO THE TOP!" CHEESE RING

1 cup Monterey Jack cheese, shredded
1 cup Sharp Cheddar cheese, shredded
1 small onion, finely chopped
  in food processor
1/4 teaspoon cayenne pepper
1/2 cup light mayonnaise
1/2 cup pecans, toasted and chopped
Tabasco with garlic to taste
1 (10 1/2-ounce) jar strawberry preserves

Stir together cheeses, onion,
cayenne pepper, mayo, pecans, and
Tabasco. Spray a small ring mold with
cooking spray. Press cheese mixture
into mold. Cover with plastic wrap.
Refrigerate overnight. Release cheese
ring onto serving platter. Pour strawberry
preserves into the center of the
ring. Serve with assorted crackers.

JACKSON STATE

There's barely a break from one game weekend to the next at Mississippi Veterans Memorial Stadium The stadium hosted an NFL preseason game between the New Orleans Saints and Indianapolis Colts on August 26, 2006, in which the Colts won 27-14.

After initially being built in 1941 with stands on both sides of the field, the northwest corner was bowled in 1980 to increase the

"Tailgating has ballooned into a big thing at Jackson State," says Calvin Younger, a food-service administrator who serves as president of the Blue Bengal Athletic Association.

Planning for a game day starts at least a week in advance for Younger, who tailgates with the association and often with his family as well. The tents and grills are already in place inside the stadium gates when fans arrive to get the party started on Friday evening.

"We'll all get together and go up to the stadium around 6 or so and hang out into the wee hours of the morning," Younger says. "Then we go back home and get ready to come back at 8:00 a.m."

The pre-game festivities include a walkthrough by the players, a new tradition for tailgating at Jackson State.

"They walk a couple hundred yards to the dressing room, and the fans love it," Younger says. "They get a chance to interact with the players and see their serious face before the game."

The players must also need to focus just to keep walking past the grills and smokers that make the air outside the stadium smell like a home-cooking diner diner, restaurant resembling the railroad dining car that is its source. POTATO SALAD

6-8 large potatoes, peeled and cubed
2 tablespoons margarine
4 tablespoons dill pickle cubes
1 tablespoon celery seed
5 eggs, boiled and chopped
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon white pepper
3/4 cup mayonnaise
Paprika and parsley for garnish

Boil and chop eggs and set aside. Peel
and cube potatoes and boil until tender,
but not soft. Drain and set aside in a
mixing bowl. While potatoes are warm,
add margarine. Cool; add pickles, celery
seed, eggs, salt, peppers, and mayonnaise
and gently stir to combine. Sprinkle with
paprika and garnish with parsley sprigs.

Yield: 8-10 servings.

That's what fans at Delta State look forward to in early September of each year, when the campus hosts its annual Pig Pickin' BBQ BBQ barbecue  and Tailgating event. Now in its 22nd year, the event started out as a modest barbecue competition and has grown into a massive meal.

"Depending on the crowd and the game that happens to be played that day, they'll have anywhere from 2,000 to upwards of 3,000 folks come through the line," says bank executive Don Pittman of Cleveland, who has spearheaded the event for the past seven years for sponsors Region's Bank and Morgan Keegan.

The Pig Pickin' began with a handful of local cooking teams who competed for trophies in an event styled after Memphis in May Memphis in May is a month long festival held in Memphis, Tennessee. This year's Pig Pickin' is slated for Sept. 15, when the Statesmen take on Henderson State. It takes place to the north of Travis E. It hosted the Yakima Bears and various other professional baseball teams in the area prior to Yakima County Stadium opening in 1993.  around the central tailgating area.

Special events like a children's fair, pep rally, and games also typically highlight the Pig Pickin' day before the football game begins.

"For games at Delta State, we don't have the crowds that you find at State or Ole Miss," Pittman says. "But you don't have to fight the crowds, either."

FRIED PORK LOIN

Pork loin (5 to 7 lbs.)
16 ounces cajun turkey injection marinade
1/2 cup cajun dry rub (Tony's or Emeril's)
Fresh crushed black pepper
Frying oil

Inject loin liberally with marinade,
rub outside with dry rub and pepper,
place in ziplock bag and place ill
refrigerator over night. When ready to
cook, remove from bag and place in
deep fry at 350 degrees for 7 minutes
per pound. Remove from fryer and
let rest for at least 30 minutes, then
slice. This meat can be sliced very thin
and served with a variety of rolls and
breads along with spicy mustard as a
great finger food or sliced thicker as
the main entree for a full course meal.

BAKED HAM

Spiral cut whole or half ham
1/4 cup Grey Poupon mustard
1/2 cup light brown sugar, packed

Unwrap ham and spread with
mustard and brown sugar. Wrap ham
in heavy duty aluminum foil and
bake 10-15 minutes per pound at
325 degrees until very tender. Serve
with whole wheat or white rolls with
honey-mustard and mayonnaise.

Yield: 20-24 servings.

WHITE WINE CAKE

1 package butter recipe golden cake mix
1 (3-ounce) package instant vanilla pudding
1 cup pecans, chopped and divided
1/2 cup vegetable oil
4 eggs
1/2 cup white wine
1/2 cup water

GLAZE:

1 cup sugar
1 stick butter, slightly melted
1/4 cup white wine

Preheat oven to 350 degrees. Spray a
bundt pan with Baker's Joy and sprinkle
1/2 cup pecans in the bottom of the pan
and set aside. Mix cake mix, pudding mix,
1/2 cup pecans, oil eggs, wine, and water.
Pour into prepared pan and bake for 50-60
minutes. For glaze stir together sugar,
butter, and wine. Remove from oven and
immediately pour glaze over cake while
it is still in the pan. Let cake cool 20-30
minutes in the pan and then remove to a
wire rack. Do not let it cool completely in
the pan or it will not come out. Yield:
16 servings.

BRIE BITES

1 (8-ounce) wheel Brie cheese
1 sheet frozen puff pastry
(from 17.3-ounce package)
2 tablespoons butter
1/2 cup walnuts, chopped
Cranberry hot pepper jelly

Preheat oven to 400 degrees. Cut Brie
into 24 one-inch cubes; arrange on a plate
and place in the freezer. Saute walnut
pieces in butter and set aside. Let pastry
thaw at room temperature for 15 to 20
minutes; unfold and roll with a rolling pin
to remove creases. Cut out circles with a 2
1/2 -inch cookie cutter and place in a mini
muffin cups that have been sprayed with
Baker's Joy. Bake at 400 degrees for 5 minutes.
Remove from oven and place one
Brie cube in center of each pastry. Bake
10 minutes or until edges are golden. Remove
from pan and immediately top with
walnuts and a half teaspoon of pepper
jelly. Yield: 24 appetizers.

PECAN PRALINE CRUNCH

1 (16-ounce)package Quaker Toasted
Oatmeal Squares cereal
2 cups pecans
1/4 cup margarine
1/2 cup brown sugar, packed
1/2 cup light corn syrup
1/2 teaspoon baking soda
1 teaspoon vanilla extract

Preheat the oven to 250 degrees. Mix
the cereal and pecans in a bowl. Bring
margarine, brown sugar, and corn syrup
to a boil in a saucepan. Remove from heat
and stir in baking soda and vanilla. Pour
over the cereal mixture, stirring to coat
well. Spread in a baking pan. Bake for
1 hour, stirring every 20 minutes. When
you take it out of the oven, after 1 hour,
keep stirring for a few minutes until cereal
mixture is not sticking together. Let cool.
Store in an airtight container. Yield: about
6 cups.
