TODAY'S RECIPE: Chicken biryani.


THIS all-in-one-pot rice dish can be made into a delicious salad up totwo days in advance. To do so, just mix the cold rice with mayonnaise and asqueeze of lemon juice and serve with Baby Gem leaves and sliced cucumber.Serves 4

Ingredients

300g/10oz basmati rice bas·ma·ti rice

An aromatic long-grain rice from India.

25g/1oz butter

One large onion, finely sliced

One bay leaf

Three cardamom cardamom (kär`dəməm): see ginger.

Four skinless chicken breasts, cut into large chunks

4 tbsp curry paste (we used Patak's Balti balti

85g/3oz raisins

850ml/112pt chicken stock

Chopped coriander coriander (kōr'ēăn`dər), strong-smelling Old World annual herb (Coriandrum sativum) of the family Umbelliferae (parsley family), cultivated for its fruits.  

Toasted flaked almonds, to serve

Method

1. Soak the rice in warm water, then wash in cold until the water runs clear.Heat butter in a saucepan and cook the onions with the bay leaf and other wholespices for ten minutes.

2. Sprinkle in the turmeric, then add the chicken and curry paste. Cook untilaromatic.

3. Stir the rice into the pan along with the raisins, then pour over the stock.Place a tight-fitting lid on the pan and bring to the boil, then lower the heatto a minimum and cook the rice for another five minutes. Turn off the heat andleave for ten minutes.

4.Stir well, mixing through half the coriander. To serve, scatter over the restof the coriander and the almonds.
