Almond Butter-Crunch Popcorn 10 cups popped popcorn * 1 cup of toasted almonds * 1/2 cup butter * 1 cup brown sugar * 1/4 cup light corn syrup corn syrup Sweet syrup produced by breaking down (hydrolyzing) cornstarch (a product of corn). Corn syrup contains dextrins, maltose, and dextrose and is used in baked goods, jelly and jam, and candy. * 1/4 tsp. vanilla * 1/2 tsp. salt * 1/2 tsp. baking soda baking soda: see sodium bicarbonate. 1) Preheat oven to 250 degrees. 2) Mix butter, sugar, syrup, vanilla and salt in a saucepan. Boil five minutes or until it reaches 248 degrees on a candy thermometer. 3) Remove from heat, and stir in soda. 4) Pour into a large bowl over popcorn and almonds, and stir to coat. 5) Spread onto a cookie sheet, and bake 45 minutes, stirring every 15 minutes.
