Dip 'til You Drop

Take a glance at the label of almost any dip or spread and you'll find that the calories, fat, saturated fat saturated fat, any solid fat that is an ester of glycerol and a saturated fatty acid. If you don't have the time or the tomatoes to make your own bruschetta (see p. 12), Bellino, Trader Joe's, and some other companies are happy to do the work for you.

The calories and saturated fat are rock-bottom low, the sodium is manageable, and the taste is spectacular. The challenge: stopping anywhere near two tablespoons.

With Trader Joe's remarkable (refrigerated) Fresh Bruschetta Sauce, you don't have to. With just 50 mg of sodium in two tablespoons, you can scoop for a while.

And why stop at tomatoes? Trader Joe's has a dynamite dynamite, explosive made from nitroglycerin and an inert, porous filler such as wood pulp, sawdust, kieselguhr, or some other absorbent material. That's half a day's sat fat ... and it's 50 percent more than what you'd get from the same amount of full-fat cream cheese. Most other brands have five or six grams of sat fat--as much as a full-fat cheese like cheddar.

The good news: The saturated fat drops to three grams or less in the "light" brands. Three grams would ordinarily be too much for a food with a two-tablespoon serving, but light cheese spreads have only one-third to one-half the sat fat of full-fat cheese spreads.
