Simple and scrumptious appetizers: Hendersonville Co-op's Kelly Fain spreads the news on pre-meal treats.

All too often we fred that appetizers and finger foods are full of ingredients that we can't even recognize, much less pronounce. Wouldn't it be great to offer snacks that you can feel good about serving? And what if you could sneak in Verb 1. sneak in - enter surreptitiously; "He sneaked in under cover of darkness"; "In this essay, the author's personal feelings creep in"

 a serving of vegetables at the same time? The following recipes are delicious finger foods, perfect for a laid-back picnic afternoon or a preamble A clause at the beginning of a constitution or statute explaining the reasons for its enactment and the objectives it seeks to attain.

This first dip is delicious and refreshing. Also, you don't have to divulge its excellent nutritional value until after folks have tasted it!
LIMA BEAN, WATERCRESS AND HERB DIP

  1 cup cottage cheese
 14 oz can lima beans
  1 bunch scallions
  2 oz watercress, chopped
1/4 cup mayonnaise or Nayo
  3 tbs chopped fresh herbs (use your favorites)
    Salt and pepper

Put cottage cheese, beans, scallions, mayo and herbs
in a food processor or blender. Blend until fairly
smooth. Season with salt and pepper to taste. Spoon
into a dish. then cover and chill before serving.
Garnish with a sprig of watercress and serve with a
veggie crudites and crackers.

This next dip can be as spicy as you like. plus it's full
of beta carotene!

SPICED CARROT DIP

  1 onion
  4 carrots
    Zest and juice of an oramje
  1 tbs hot curry paste
  1 cup plain yogurt
    Fresh basil
1-2 tbs lemon juice
    Red Tabasco sauce
    Salt and pepper

Finely chop the onion and grate the carrots. Place
onion, carrots, orange zest and juice and curry paste
into a small saucepan. Bring to a boil. cover and
simmer for about ten minutes. Place the mixture in
a food processor or blender until smooth. Let cool
completely. Stir in the yogurt, then tear basil leaves
into pieces and stir into the mixture. Add lemon juice
and Tabasco[R] and salt and pepper to taste. Serve at
room temperature with crackers or tortilla chips.

And finally, an oldie but goody, and a delicious way
to get vitamin E and essential fatty acids. Also. it's
about the easiest thing in the world to make!

GUACAMOLE

  Ripe avocados, peeled and pitted
  Scallions
  Chopped tomato (can be left out if you're making salsa as well)
  Fresh chili pepper (leave the seeds in if you like it spicy!)
  Fresh lemon or lime juice (I prefer lime)
1 bunch of chopped cilantro
  Salt and pepper

Mash avocados in a large bowl with a fork. Add all
remaining ingredients. Garnish with cilantro sprigs
and serve with absolutely everything.
