Shad Roe with Roasted Bananas and Chardonnay Butter.


For the Chardonnay butter sauce, in a medium saucepan, bring the Chardonnay, vinegar, and shallot shallot: see onion.

For the spinach, in a medium saute pan, melt the butter over medium heat. Add the spinach and simmer until just wilted, about two minutes. Remove from the heat, season, and set aside keeping warm.

To finish the sauce, whisk in the butter to incorporate. Strain, through a fine mesh sieve, season, and set aside keeping warm.

To serve, spoon some spinach onto the center of a plate and set shad roe lobe on top. Spoon some bananas over the dish, place some bacon strips to one side, and drizzle some Chardonnay butter around the dish.

(Serves 6)

For the Chardonnay butter sauce:

1/2 cup Chardonnay wine

1/2 cup champagne vinegar

1 shallot, peeled and sliced in half

4 ounces unsalted butter; diced and chilled

4 ounces salted butter, diced and chilled

Salt, white pepper, and lemon juice to taste

For the bananas:

2 ounces clarified butter

1/4 cup all-purpose flour

3 under ripe bananas, peeled and sliced on the bias

For the spinach:

2 tablespoons unsalted butter

3 cups spinach leaves

Salt, white pepper, sugar, and nutmeg to taste

For the shad roe:

2 ounces clarified butter

6 shad roe lobes

Juice of 1 lemon

Salt and pepper
