Hometown: Cesenatico, Italy (a seaside town on the Adriatic). Current residence: Venice, Italy. She and her husband, Victor, have lived there for the last 16 years. Later this year, after her last classes in Venice, Marcella and Victor will move to Longboat Key, Fla., to be near their 39-year old son. On her latest cookbook: ``Marcella Cucina'' is a very personal book. ``It reflects very much our life, how we eat and how we shop for recipes,'' said Hazan. Although it's still a teaching book, she is more emotional about this volume. Most popular dish she makes: Baked Artichokes, Shrimp and Mozzarella moz·za·rel·la n. A mild white Italian cheese that has a rubbery texture and is often eaten melted, as on pizza. [Italian, diminutive of mozza, a cut, mozzarella, from mozzare, - the recipe is in her new cookbook. Favorite cookbook: ``The Classic Pasta Cookbook,'' (DK Publishing) by Giuliano Hazan (her son). Three favorite foods: Vegetables, pasta, fish. Marmalade has a jellylike consistency and a slightly bitter flavor, caused by including the rind of some tart . Favorite restaurant: Da Fiore in Venice (all fish and seafood). If she couldn't be a food writer, what would she be?: She'd go back to her first career as a research biologist (she has a degree in biology). Worst kitchen disaster: It happened about 20 years ago when she cooked dinner for a food editor. ``My lamb stew (cooked on top of the stove), never cooked. It got tougher and tougher,'' she said.
