SMALL BITES.

Byline: > Larry Lipson

Is there a chef in you?

There are those among us who fantasize about being a restaurant chef.

Wine Bistro in Studio City has launched its guest chef program to make those fantasies come true.

Those interested need to submit to the restaurant a three-course prix-fixe menu consisting of two to four different appetizers or starter dishes such as soup or salad, two to four separate entrees containing meat, fish or poultry poultry, domesticated fowl kept primarily for meat and eggs; including birds of the order Galliformes, e.g., the chicken, turkey, guinea fowl, pheasant, quail, and peacock; and natatorial (swimming) birds, e.g., the duck and goose.  and two different desserts.

Also required are complete recipes of each dish with a detailed list of all ingredients.

Chef Peter Roelant and owner-host Jean-Bernard "J.B." Torchon will review all entrees and select Sunday chefs of the week, beginning in October.

Chosen entrants will also need to prepare and cook submitted dishes at the Wine Bistro on the Thursday prior to the assigned Sunday.

Entries should be mailed to Wine Bistro, Guest Chef Program, 11915 Ventura Blvd., Studio City, CA 91604. Information: (818) 766-6233 or www.winebistro.net.
