The original Maria's in Brentwood, sold in 1984 and most recently known as Maria's Cucina, has been taken back by Madelyn Alfano, daughter of the restaurant's namesake and founder Maria Alfano. Maria's prides itself on the chain's fresh daily grated Romano cheese Romano cheese is a type of cheese that is known for being very hard, salty and sharp. It is usually grated. It is different from normal cheeses because it requires more milk per pound, most water being lost in the process.
