Why would an Easter buffet champagne brunch feature a Chinese mandarin food station offering dim sum dim sum

A traditional Chinese cuisine in which small portions of a variety of foods, including an assortment of steamed or fried dumplings, are served in succession.

The answer is simply that there's a highly experienced Hong Kong Hong Kong (hŏng kŏng), Mandarin Xianggang, special administrative region of China, formerly a British crown colony (2005 est. pop. 6,899,000), land area 422 sq mi (1,092 sq km), adjacent to Guangdong prov.  chef on the premises, so why not use his expertise? The restaurant is Cafe Sierra in the Universal Hilton Hotel, 555 Universal Hollywood Drive, Universal City, where buffet meals are regular events and taken very seriously.
