SIDE-DISH STARS FOR TURKEY FEAST : PARMESAN YAM PUFF.


To accompany this year's turkey, here are some tasty side dishes.

Convenient and trendy garlic-infused oil adds quick and delicious garlicky gar·lick·y  
adj.
Containing, tasting of, or smelling of garlic.

Adj. 1. garlicky - relating to or tasting or smelling of garlic; "garlicky sauce"
 savor to this elegant, make-ahead Thanksgiving side dish.

3 pounds fresh yams OR sweet potatoes

Water

1/4 cup milk

2 large eggs

1 cup freshly grated Parmesan cheese a kind of cheese of a rich flavor, though from skimmed milk, made in Parma, Italy.

1/2 teaspoon ground nutmeg

Salt and freshly ground pepper to taste

Peel yams and cut into 2-inch pieces. Place in a large pot, cover with water and cook over medium-high heat until tender, 20 to 25 minutes.

Meanwhile, brush olive oil olive oil, pale yellow to greenish oil obtained from the pulp of olives by separating the liquids from solids. Olive oil was used in the ancient world for lighting, in the preparation of food, and as an anointing oil for both ritual and cosmetic purposes.  over bottom and sides of a 1 1/2- to 2-quart shallow casserole dish.

Drain yams thoroughly and place in a mixing bowl. Beat with an electric mixer until fluffy. Beat in 2 tablespoons olive oil, milk, eggs and 1/2 cup Parmesan cheese. Season with nutmeg, salt and pepper

. Spoon mixture into prepared dish. Sprinkle top with remaining 1/2 cup cheese and drizzle with remaining tablespoon of olive oil. (At this point casserole can be covered and refrigerated re·frig·er·ate

When ready to serve, bake in preheated 325-degree oven 55 to 60 minutes or until light golden brown on top. Serve hot. Makes 6 to 8 servings.

NOTE: If side dish was made ahead of time and chilled, baking time will be about 10 to 15 minutes longer.

PEARL ONIONS WITH MUSTARD AND BROWN SUGAR

Using frozen prepeeled and precooked pre·cook

To cook in advance or partially.

Adj. 1. precooked - cooked partially or completely beforehand; "frozen precooked meals from the supermarket"
 pearl onions makes preparation of this favorite Thanksgiving vegetable easier. The onions are glazed rather than creamed to appeal to lighter contemporary tastes.

2 tablespoons unsalted butter

1 package (16 ounces) frozen small whole onions, thawed

2 1/2 tablespoons light brown sugar

1 tablespoon Dijon mustard

2 tablespoons minced fresh parsley

Melt butter in a large skillet over medium heat. Add onions and cook, stirring occasionally, until onions begin to brown on all sides, 10 to 12 minutes. Sprinkle with brown sugar and gently stir in mustard to make a smooth coating over onions.

Cook 2 minutes more. Sprinkle with parsley and serve hot. Makes 6 servings.

PECAN RICE WITH RED GRAPES AND SMOKE HOUSE ALMONDS

Wild pecan rice is grown in the Acadian area of Louisiana CODE, OF LOUISIANA. In 1822, Peter Derbigny, Edward Livingston, and Moreau Lislet, were selected by the legislature to revise and amend the civil code, and to add to it such laws still in force as were not included therein.  and has a wonderful nutty flavor though it contains neither pecans nor wild rice. The rice comes packaged in a brown and yellow box and is available in supermarkets. The unique flavor of the rice is further enhanced in this recipe with red grapes and smokehouse almonds.

1 box (7 ounces) wild pecan aromatic rice OR 3 cups cooked brown rice

1 cup seedless Seed´less

1/2 cup smokehouse almonds, coarsely chopped

Cook rice according to according to

 package directions. When rice is tender, fold in grapes and almonds.

Cover rice and let stand 5 to 10 minutes before serving. Makes 6 servings.

APRICOT CHEESECAKE WITH WHOLE CRANBERRY SAUCE

The tang of pureed dried apricots mediates the richness of the cream cheese in this luscious and easy-to-make harvest-hued cheesecake. Whole cranberry sauce makes for a contrastingly colorful and convenient glaze.

1 package (6 ounces) dried apricots (1 cup)

Water

1 1/2 cups gingersnap gin·ger·snap

A flat brittle cookie spiced with ginger and sweetened with molasses.

Noun 1. gingersnap - a crisp round cookie flavored with ginger
ginger nut, ginger snap, snap
 OR graham cracker crumbs

1/3 cup unsalted butter, melted

1 tablespoon grated orange peel

3 packages (8 ounces EACH) cream cheese, softened

3/4 cup sugar

4 large eggs

1/2 cup dairy sour cream

1 cup canned, whole berry, cranberry sauce

Cover apricots with water and simmer in a small saucepan until quite soft, 25 to 30 minutes. Drain.

Toss together gingersnap crumbs with melted butter in a small mixing bowl. Press crumbs over bottom and 1 1/2 inches up sides of a 9-inch springform pan. Set aside.

To rub through a strainer or process (food) in a blender.

 apricots and orange peel together in a large food processor fitted with a steel blade.

Break cream cheese into small chunks and add to food processor; puree with apricots until smooth. Add sugar and process again until smooth. Add eggs, one at a time, processing until smooth after each addition. Add sour cream and once again process until incorporated. Pour batter into springform pan.

Bake cheesecake in preheated 350-degree oven 50 to 60 minutes or until center is firm when touched lightly. Cool completely.

Stir whole cranberry sauce. Spread evenly over top and refrigerate re·frig·er·ate
