 about what food looks like that an obscene amount of perfectly good fruit, vegetables and eggs are thrown away, fed to pigs or ploughed back into the soil before they even leave the farm.

The challenge in this 90-minute documentary is for four top chefs - Angela Hartnett, Richard Corrigan, Matt Tebbutt and Simon Rimmer Simon Rimmer was born on May 5th 1963. He is married with two children. Simon is the resident chef on BBC2's Something for the Weekend, which first aired on Sunday 8th October 2006.  - to prepare a banquet for 60 VIP guests purely out of all the meat, fish and other ingredients that would otherwise have gone to waste.

Well, I say challenge, but in fact they're disgustingly spoiled for choice. Seeing the scale of the waste at every level of the food supply chain absolutely beggars belief.

If you've ever wondered why feeding your family is so expensive, seeing 30,000 heads of lettuce ploughed back into the ground at just one farm on one day because they happen to be the wrong size or a little discoloured is hugely depressing - not to say totally scandalous.

CAITLIN'S COKE HELL

FORMER Emmerdale star Sally Oliver pops up in Holby City tonight as Caitlin, Michael's one-night stand.

Since his break-up from wife Annalese, Michael is struggling to hold his life together, but it's Caitlin who ends up in real trouble following a cocaine overdose.

And she's joined by another Emmerdale newcomer, Catherine Tyldesley, playing a sick opera singer.

Her plight really tugs at Oliver's heart strings, causing him to cross the line with his mentor Greg about what treatment might be best.

Meanwhile, Frieda (Olga Fedori) continues to liven up the place with her unlikely combination of ghoulish ghoul

When a patient singles her out as the target for his racist remarks and sexist behaviour, he pretty soon realises that he's picked the wrong Ukranian goth-nurse to mess with.

There's even a chance that peace may break out between Penny and Frieda as they unite against a common enemy.

SIMON Hale was a popular student at Newcastle University when he fell 20 feet and suffered a serious brain injury.

Zac Beattie's film follows his rehabilitation, to try and answer the question all families of such patients want to know: will he ever be the way he was? On the outside Simon appears much as before, but inside he's different - and getting to know this new person is as much a challenge for his family and friends as it is for Simon himself.

Simon is blessed with a mother and two brothers who are prepared to take him however he comes - even if it means getting punched in the face as he struggles to control his anger.

But it's the visit back to the scene of his accident that really pulls you up short. He climbed over a fence trying to sneak into a nightclub - not realising there was a 20-foot drop. Seeing how one pointless, drunken mistake altered the course of Simon's life brings home how frighteningly precarious life can be.

AFTERMATHOF WAR

WOUNDED PLATOON BBC2, 9pm

SINCE the 2003 invasion of Iraq, 17 US soldiers based at Fort Carson, Colorado, have been charged or convicted in connection with 14 murders, manslaughters and attempted murders. Many served in the same battalion there. Three came from a single platoon.

Focusing on the soldiers of Third Platoon, this film aims to find out what multiple tours and post-traumatic stress are doing to a generation of American soldiers.

Brutal images shot by troops on patrol in the streets of Baghdad show the unbearably tense and violent conditions they were subjected to there.

The film also explores allegations that some platoon members killed unarmed Iraqi civilians on patrol. One soldier, now serving a 52-year prison sentence for attempted murder back in the US, admits they were "trigger happy". The US Army say they have insufficient evidence insufficient evidence n. a finding (decision) by a trial judge or an appeals court that the prosecution in a criminal case or a plaintiff in a lawsuit has not proved the case because the attorney did not present enough convincing evidence.  to charge anyone.

CAIN'S needling Maisie tonight about how she must know Ryan wouldn't have been capable of killing her dad - who was also his dad.

And there have always been seeds of doubt in her mind about this - despite Nathan's attempts to convince her that Ryan's a murderer. But tonight, as Ryan despairs of ever being able to clear his name, Maisie discovers the one piece of evidence that could prove he's been set up: a video of Ryan, taken long after their dad was killed, wearing the chain found at the crime scene.
