Ranchero souffle.

Sliced oranges go well with this. About 3/4 loaf (1-lb. size) sourdough bread Sauce (recipe follows) 1 pound Cheddar cheese, shredded 1 pound bacon, crisply cooked, drained, and crumbled 6 eggs 3 cups milk 2 teaspoons dry mustard

Cut enough bread into 1/2-inch-thick slices to make 2 single layers in a greased 9- by 13-inch baking dish. Arrange half the slices in a single layer in the dish; cut or overlap to fit. Spread with half the sauce, cheese, and bacon.

Repeat layers. Beat together eggs, milk, and mustard; pour over casserole. Cover and chill 8 to 24 hours.

Bake, uncovered, in a 350[deg.] oven until hot and puffed in center, about 55 minutes. Let stand 20 minutes; cut into squares. Serves 8 to 10.

Sauce. To a 1-1/2-to 2-quart pan, add 1 can (15 oz.) tomatoes and mash. Add 3 tablespoons tomato paste; 1 large onion, finely chopped; 1 clove garlic, minced or pressed; 1 can (4 oz.) diced green chilies; 1 teaspoon dry oregano leaves; and 1/8 teaspoon cayenne. Bring to a rolling boil. Use hot or cold.
