RESTAURATEUR PLEADS NOT GUILTY TO ATTACKING WAITER.

In a scene suitable to a bad movie, the owner of a posh Valencia restaurant was charged with attacking one of his waiters - first with a butter knife and then with a broken bottle.

Valencia Inn owner Giancarlo Zaretti was arraigned Tuesday in Newhall Municipal Court on charges of assault and making threats in the Saturday evening incident at his restaurant.

Zaretti, 51, of Northridge pleaded not guilty and was ordered held in lieu of Instead of; in place of; in substitution of. It does not mean in addition to.  $120,000 bail. He faces a prison term if convicted.

Beam confronted Zaretti after a new waiter at the restaurant received just $12 in tips, while a friend of Zaretti received $40. Beam and another waiter each got about $27, Ulfig said.

``He didn't think it was right that the waiter got so little and (Zaretti's) friend so much,'' Ulfig said. ``The victim claims the defendant got angry and pushed him, and he pushed him back.

``The defendant then came at him with a butter knife. He was chasing him around with a butter knife. Then he got a bottle of wine, cracked cracked

Neither Zaretti nor his attorney could be reached for comment Tuesday.

Zaretti also is accused of disconnecting the telephone at the restaurant so the attack could not be reported and of threatening to kill Beam when he went to use a telephone across the street.

Zaretti left the restaurant and was not there when deputies arrived. He was arrested the following day at the restaurant by sheriff's deputies, officials said.
