RESTAURANT REPLICAS: COPYCAT FARE GREAT FOR SUMMER ENTERTAINING : BARBECUED CHICKEN SALAD.

When you want some delicious fare for summer entertaining on the patio or by the pool, keep today's trio of recipes in mind.

The Cheesecake Factory (Woodland Hills and other locations in the Southern California Southern California, also colloquially known as SoCal, is the southern portion of the U.S. state of California.  and Hawaiian Strawberry Pie are facsimiles of two popular creations available at Bakers Square (Granada Hills and other Southern California locations), the restaurant and pie establishment.

The Barbecued Chicken Salad is reminiscent of those that have been served in various restaurants the last several years. But we found this new version with barbecue ranch-style dressing a great choice. Our home version goes together in a jiffy A fraction of time that has numerous interpretations depending on who uses it. It may refer to one computer clock cycle, one nanosecond, one millisecond or one AC power cycle. There may be others. See nanosecond.

Toss the salad greens with dressing made by combining prepared ranch-style dressing and bottled hickory barbecue sauce and some of the vegetables. After arranging the greens on individual serving plates or in large individual bowls, arrange the remaining veggies and chicken in separate mounds atop the lettuce. Pile fried onion Fried onions are a popular snack food or accompaniment to various recipes, made from frying onions. They are usually associated with fast food.

It is an integral part of Green bean casserole.

 rings (either make your own or purchase them in a can) in the center, and you're in for a wonderful main-dish salad.

This salad would also make a good buffet choice for a party, indoors or out. Simply toss all the ingredients with the dressing and garnish the top with chopped tomatoes, a little corn and onion rings.

The Boston Cream Pie, though not inexpensive to make at home, is a breeze for cooks to assemble. We lined a pie pan with 1/2-inch slices of store-bought chocolate loaf cake, then topped with an instant vanilla pudding and pie filling mix with whipped cream folded in. Next, we added a layer of 1-inch slices of store-bought golden loaf cake. Then the entire creation is spread with a chocolate ganache-style topping. Be sure to refrigerate re·frig·er·ate

The prepared loaf cakes drive the cost of the homemade dessert up. If you have plenty of time, you can save money by baking a single layer each of chocolate and yellow cake made from a mix.

Our copycat version of the Hawaiian Strawberry Pie (it was the May pie of the month at Bakers Square and is no longer available there), laden with shredded coconut, chopped pecans and crushed pineapple in a vanilla instant pudding mix with whipped cream folded in, is as showy show·y

Keep these recipes handy for all kinds of wonderful dining this summer and beyond. Next time you're invited to a potluck, you might even consider one of these dishes. And don't forget them for the upcoming July Fourth holiday. Any or all would make great celebration fare.

2 red lettuce leaves

12 cups cut-up iceberg and red leaf lettuce

2 cups cooked, cooled corn kernels (use frozen cooked corn, if desired)

2 cups finely chopped tomatoes

2 cups finely chopped cucumbers

Barbecued Ranch Dressing

Seasoned salt Noun 1. seasoned salt - combination of salt and vegetable extracts and spices and monosodium glutamate
flavorer, flavoring, flavourer, flavouring, seasoning, seasoner - something added to food primarily for the savor it imparts
 and garlic pepper to taste

1 cup rinsed and drained canned black beans

4 cups chopped boneless chicken breast, coated with 6 to 7 tablespoons hickory barbecue sauce (Chris' & Pitt's preferred)

1 large avocado, thinly sliced

1/2 cup minced green onions

Fried onion rings (optional)

Line each of 4 large individual-serving salad bowls or dinner plates with 3 red lettuce leaves. In a large bowl, combine iceberg and red leaf lettuces with 1 cup EACH corn, tomatoes and cucumbers. Add 3/4 of Barbecued Ranch Dressing, seasoned salt and garlic pepper to taste and toss until evenly coated. Place a mound of salad mixture in each bowl or plate, dividing evenly.

Arrange piles of remaining corn, tomatoes and cucumbers (about 1/4 cup of EACH per plate) along with black beans (1/4 cup on EACH plate) and barbecued chicken (1 cup per plate) on top of greens mixture. Top with avocado slices and sprinkle with green onions. Drizzle remaining Barbecued Ranch Dressing over tops of salads. Garnish top of each salad with fried onion rings, if desired. Makes 4 main dish servings.

BARBECUED RANCH DRESSING: In a medium mixing bowl, combine 1 cup dairy sour cream, 1/2 of a 0.4-ounce package original ranch salad dressing mix (Hidden Valley Ranch buttermilk buttermilk

residual fluid after removal of fat from milk in butter manufacture; a protein-rich supplement fed to pigs.
 recipe), 1/4 cup hickory barbecue sauce (Chris' & Pitt's preferred) and dash cayenne pepper, blending well.

ANOTHER DRESSING VARIATION: In a medium bowl, combine 1 jar (8 ounces) bottled original ranch dressing (Hidden Valley Ranch brand preferred) and 1/4 cup hickory barbecue sauce, blending well.

If more dressing is desired, either of the dressing recipe variations can be doubled.

BOSTON CREAM PIE

1 1/3 cups whipping cream Noun 1. whipping cream - cream that has enough butterfat (30% to 36%) to be whipped

1 large package (5.1 ounces) INSTANT vanilla pudding and pie filling mix

1 cup milk

1 teaspoon vanilla

3/4 of a 15-ounce package chocolate loaf cake (such as Entenmann's), cut lengthwise length·wise

1 package (12 ounces) golden loaf OR pound cake, cut lengthwise into 1-inch thick slices

In a bowl of electric mixer, beat 1 cup cream, until stiff; remove cream from mixing bowl to another bowl and refrigerate.

In same bowl, combine pudding mix, milk and vanilla. Beat on medium speed 1 to 2 miFnutes. Remove bowl from mixer. Fold in a large dollop of whipped cream and then fold in remaining whipped cream. Refrigerate while preparing crust.

HAWAIIAN STRAWBERRY PIE

2 packages (3.4 ounces EACH) INSTANT vanilla pudding and pie filling mix

1 cup milk

3/4 cup well-drained crushed pineapple (press thoroughly dry with paper towels)

3/4 cup chopped pecans

3/4 cup flaked coconut

1 cup whipping cream, whipped

1 baked (9 1/2-inch) pie shell

1 pint basket fresh strawberries, rinsed and hulled

1/2 cup seedless Seed´less

Whipped cream for garnish (optional)

In a medium bowl, combine pudding mixes and milk. Whisk together with a wire whisk 1 minute until thoroughly blended. Stir in well-drained pineapple, pecans and coconut until well-blended. Fold in whipped cream.

Turn into baked pie shell, spreading evenly. Refrigerate 4 to 5 hours or until filling is set.

An hour before serving time, arrange whole berries over top of pie and spoon strawberry jam or glaze over berries. Refrigerate until serving time. Garnish with a border of whipped cream, if desired. Keep any leftovers refrigerated. Makes 1 pie.
