RED-HOT CHILI, COOL CARS COMBINED FOR FUND-RAISER.

The brother-sister cooking team have entered the same family recipe of ``Yahoo Wahoo Fire Brew'' over the past six cook-offs hosted by the Knights of Columbus Knights of Columbus, American Roman Catholic society for men, founded (1882) at New Haven, Conn. (where its headquarters are still located), by Father Michael J. McGivney.  Council, drawing in the most daring of chili connoisseurs with their spicy blend of onions, garlic, beer and peppers.

For those who need an extra kick, the Smiths always offer a dash of ``After Death'' or ``Last Rites'' hot sauces.

``We always run out,'' said Cathy, whose special chili was awarded third place during the Simi Valley Simi Valley (sē`mē, sĭm`ē), city (1990 pop. 100,217), Ventura co., SW Calif. in an oil, fruit, and farm region; laid out 1887, inc. 1969.  Days cook-off last year. ``People like it hot.''

The Smiths were among 21 cooks who entered their recipes Sunday during the ninth annual Knights of Columbus Council's chili cook-off and car show.

Sanctioned by the International Chili Society, the outdoor event will benefit 25 charities throughout Ventura County, said Rick Ostrich ostrich, common name for a large flightless bird (Struthio camelus) of Africa and parts of SW Asia, allied to the rhea, the emu and the extinct moa. It is the largest of living birds; some males reach a height of 8 ft (244 cm) and weigh from 200 to 300 lb , chairman of the event.

``We have five more cooks this year, so we hope to raise even more,'' Ostrich said. The council raised $18,000 in 1995, attracting more than 7,000 adults.

Featured events Sunday included Elvis impersonators, music by the Rick Tucker Band and free country-western dance lessons. A horseshoe horseshoe, narrow plate, commonly of iron or steel, shaped to fit a horse's hoof and attached to the hoof by nailing it to the inner edge of the horny wall of the hoof.  pitch, Miss Chili Pepper contest for kids and pony rides also were featured.

More than 100 custom, classic and special-interest cars - including a souped-up maroon maroon, term for a fugitive slave in the 17th and 18th cent. in the West Indies and Guiana, or for a descendant of such slaves. They were called marron by the French and cimarrón by the Spanish.  '32 Ford Phaeton and a 1902 Tourist roadster - were judged throughout the day.

Chili judges scheduled to taste the spicy dishes included Moorpark Mayor Paul Lawrason and Simi Valley Police Chief Randy Adams.

Food vendors contributing to Sunday's event included Vons, Hometown Buffet HomeTown Buffet is a buffet-style, sit-down restaurant chain headquartered in Eagan, Minnesota with locations throughout the United States.

Its wide selection of food include pizza, hot dogs, hot wings, sliced ham among many others.
 and Albertson's.

While the council raised a mere $500 on its first try, Ostrich said, the event's progress over the years was well worth the wait.

``It took time to get it going and raise money for all these groups,'' Ostrich said. ``Now, our worst fear is whether or not it's going to rain.''
