Cornmeal adds texture to crusty puff. 8 pork sausage links (1/2 lb. total) 1 large Golden Delicious apple, peeled, cored, and cut into 1/2-inch-thick slices 2 large firm-ripe Santa Rosa--type plums, pitted and cut into 1/2-inch-thick slices About 1/3 cup butter or margarine 3 large eggs 3/4 cup all-purpose flour 3/4 cup milk 1 teaspoon yellow cornmeal Warm maple syrup

In a 12-inch frying pan with an oven-proof handle, cook sausages over medium heat until browned. Lift out of pan. Add apple; cook 3 minutes. Add plums; cook fruits, turning gently until soft, about 3 minutes more. If needed, melt enough butter in pan to make 1/3 cup fat. Off the heat, lay sausage in a spoke pattern between fruit.

In a blender combine eggs, flour, and milk; whirl until smooth. Pour over sausage and fruit. Bake in a 422[deg.] oven for 10 minutes. Sprinkle evenly with cornmeal and continue baking until puffy and golden, about 10 minutes more. Cut into wedges and serve at once with syrup. Makes 4 servings.
