Popcorn bursts into a fluffy treat when fluid in the kernel heats up. The moisture expands, pushing against the kerners outer layer. When the pressure builds enough, the kernel explodes.

Bruce Hamaker, a food chemist at Purdue University Purdue University (pərdy`, -d`), main campus at West Lafayette, Ind.  in Indiana, found that some kernels' structure lets moisture leak out Verb 1. leak out - be leaked; "The news leaked out despite his secrecy"

 during heating. Result: Low pressure and no popped corn.
