PROVIDENCE FOR FISH AND SEAFOOD LOVERS.

The long-awaited Providence restaurant, with chef-owner Michael Cimarusti at the helm, has finally opened in the former Patina building at 5955 Melrose Ave.

Cimarusti, who rose to local prominence at downtown L.A.'s Water Grill after a stint at Spago, shares ownership with well-known maitre d'-manager Donato Poto. His resume includes Bastide Bastides are fortified[1] new towns built in medieval Languedoc, Gascony and Aquitaine during the thirteenth and fourteenth centuries, although some authorities count Mont-de-Marsan and Montauban, which was founded in 1144,[2] as the first bastides.  and Water Grill.

Cimarusti brings his passion for fish and seafood ($32 and up) to the table with regular a la carte entrees of John Dory, monkfish monkfish

A BIG BREAK: With white asparagus season ending, Matterhorn Chef proprietor Ueli Huegli is looking forward to his annual vacation.

In true European fashion, the Swiss-born chef Huegli shuts down his popular 13726 Oxnard St., Valley Glen, restaurant for a month every year, allowing everyone who works there more than four weeks of vacation.

Matterhorn Chef will close this year from July 4 to Aug. 4, reopening with a Swiss Independence celebration lasting the rest of August, featuring special Swiss dishes.

GLAZED LOOKS: Is it donut or doughnut?

Grace restaurant, 7360 Beverly Blvd., picks the latter spelling for its Wednesday dessert offerings of upscale doughnut desserts at $9 each ($11 for a sampling of four).
