Edith Mael of West Hills requested a recipe for peanut sauce Peanut sauce, Satay sauce or Kacang sambal is a sauce widely used in Indonesian cuisine, Malaysian cuisine, Thai cuisine, and Chinese cuisine. It is also used in European cuisine.  using peanut butter to pour over Chinese noodles Chinese noodles are an essential ingredient and staple in Chinese cuisine. There is a great variety of noodles, which vary according to their region of production, ingredients, shape or width, and manner of preparation.  and other dishes.

Two readers sent along recipes to share.

Louise Saiz's Peanut Sauce comes from a Thai cooking class she took at Mission College Community Extension. In the class, the delicious sauce was used as a dip with apples and carrots. The other sauce comes from Joni Schaper and is seasoned with ginger root, crushed red pepper red pepper: see pepper.  and soy sauce.

PEANUT SAUCE

1 (14-ounce) can coconut milk

1/2 tablespoon red curry Red curry (Thai แกงเผ็ด; IPA: [kɛːŋ pʰet]) (lit: spicy curry) is a popular Thai dish based on coconut milk heated with red curry paste and fish sauce.  paste

1 tablespoon chili paste with bean oil (nam prig pao)

2 tablespoons sugar

1/4 teaspoon salt

1 cup peanut butter

In a 2-quart saucepan, heat coconut milk over medium heat until boiling. Add red curry paste and chili paste. Use back of a wooden spoon to smash red curry. Stir to blend. Bring to a boil. Add sugar, salt and peanut butter.

Stir and cook until sauce is thoroughly heated, about 3 minutes. Remove from heat and serve.

PEANUT SAUCE

1/2 cup peanut butter

2 tablespoons soy sauce

1 teaspoon grated ginger root

1/2 teaspoon crushed red pepper

1/2 cup chicken broth Noun 1. chicken broth - a stock made with chicken
chicken stock

broth, stock - liquid in which meat and vegetables are simmered; used as a basis for e.g. soups or sauces; "she made gravy with a base of beef stock"
 

In a small bowl with a wire whisk, combine until smooth peanut butter, soy sauce, ginger root and red pepper. Gradually whisk in broth. Sauce is ready to serve.
