We particularly liked Tree of Life and Cascadian Farm (which just missed getting a Best Bite). Maybe it's the organic potatoes, but both tasted fresher than the other brands we tried. A few buying tips:

* Get unseasoned. A five-ounce serving of most frozen fries contains about 50 mg of sodium. Too bland for you? Just add some ketchup, garlic garlic: see onion.

Most hash browns are "Fat-Free!" And those claims on their packages are no lie ... until you follow the recommended cooking method. Add two to three tablespoons of oil to the frying pan and you're talking eight to 29 grams of fat per serving.

Sure, some packages say you can "pan fry with water." Go ahead. You might come to appreciate a plateful of dry, flavorless potato shreds.

Our advice: use a non-stick pan and just 1 1/2 teaspoons of oil for each serving (an oil spray didn't work as well). While the results won't match what they serve at your local diner diner, restaurant resembling the railroad dining car that is its source. In the mid-19th cent., the first dining cars that appeared on trains were nothing more than an empty car with a fastened-down table. George M. , the extra oil makes a huge difference. That's why we upped the fat numbers for all but the fattiest (non-microwave) hash browns in our chart by 1 1/2 teaspoons of oil per serving.
