This cross-over heal-based study of 12 healthy volunteers demonstrated an increase in amount of resistant starch when boiled potatoes were cold stored (from 1.7 to 2.5 g). Both cold storage and added vinegar reduced the GI compared with freshly boiled potatoes, albeit similar to the white wheat reference bread.

This parallel single-blind randomised five-week trial (with three week wash-in) with four intervention and one control group(s) found that the dose of [beta]-glucan does not necessarily predict cholesterol lowering effects and the food source is important.

This randomised cross-over trial comparing four weeks consumption of 40 g dairy fat as better versus cheese in 14 men and five women of middle age and with mean total cholesterol 5.6 [+ or -] 0.8 mmol/L found the dairy fat delivered as butter significantly raised total and LDL cholesterol compared with a diet with less saturated fat, but this was not the case when the dairy fat was consumed as cheese.
