, Minn. -- Healthy airport food is no longer an oxymoron. The Minneapolis-St. Paul International Airport (MSP) is among a handful of U.S. airports concentrating on offering travelers healthier food choices than ever before.

From grab-and-go sushi to fine dining that caters to vegetarians, the selection of contemporary restaurants appealing to the sophisticated tastes of health-conscious travelers has vastly increased at MSP, the nation's 12th largest airport.

"This new diversity in food options is the result of a plan we instituted several years ago due to traveler requests," said Executive Director Jeff Hamiel of the Metropolitan Airports Commission. "We felt there was a real need for fresh, healthier meal choices and the response from people has been overwhelmingly positive - there's a larger appreciation for the new restaurants and menus than we ever anticipated."

Join award-winning cookbook author and food commentator Paulette Mitchell as she leads a taste tour of MSP Airport eateries where we sample a range of healthier choices in both full-service and quick-serve restaurants. Known for her discerning palate and keen culinary insights, Mitchell also recently traveled to 10 other major airports and sampled the food offerings. "I found that very few airports offer much in the way of healthy food," said Mitchell. "Without a doubt, the choices at MSP Airport are exceptional."

Fresh Spring Rolls: Ike's Food & Cocktails. From Ike's Small Plates menu, these make a terrific lunch or light dinner and are great for sharing. It's brimming with corn, carrots, bell peppers and onions in addition to black beans for meatless protein, then topped with fresh scallions. "It's so thick you could almost eat it with a fork, truly wholesome and hearty. Really, really, good," raved Mitchell. For a whole-grain choice, request a slice of the restaurant's Healthy Hemp bread to go with it.
