 and techniques gleaned from 40 years of cooking. Child calls it, ``A mini aide-memoire for general home cookery aimed at those who are tolerably familiar with culinary language; whose kitchens are normally well equipped with such staples as jelly-roll pans, a food processor, a decent rolling pin; and who know their way around the stove reasonably well.''

Information is arranged in categories: soups and sauces; salads and their dressing; vegetables; meats, poultry and fish; egg cookery; breads, crepes and tarts; and cakes and cookies. And several basic recipes (with lots of variations) are sprinkled in along the way.

The vegetable cooking charts are useful, as are the ways for roasting all sorts of meats and much more. Unlike many of Child's long and laborious volumes, this one is rather thin and compact - with only 127 pages. The user-friendly, easy-to-follow, streamlined format is refreshing. All levels of cooks will appreciate this handy volume for quick reference.

The Auction of Washington Wines will be Aug. 23-25 with events on the grounds of Chateau Ste. Michelle The Chateau Ste. Michelle is a Washington winery in Woodinville, Washington. They are noted for their bestselling Riesling (as the largest single producer of Riesling in the world), but produce wines of many classic varietals and some experimental wines on a per-year basis. Ste. , Woodinville, Wash., and at Seattle restaurants. A concert/picnic will take place Aug. 23, followed by winemaker dinners at Seattle restaurants on Aug. 24. The auction (and black-tie dinner) is Aug. 25. Cost for the auction (and black-tie dinner) and a choice of either the picnic or restaurant dinner is $500 per person. NEW GIMMICK: What will marketers think of next? Now you can add a burst of color not of the white race; - commonly meaning, esp. in the United States, of negro blood, pure or mixed.

 when garnishing desserts or other foods with aerosol whipped cream by attaching a color tip. It's a preloaded plastic disposable tip that contains coloring - either green, red or blue. The tips are easy to use - simply twist onto the whipped cream nozzle. Press lightly against the tip and whipped cream will dispense with a colored edge. The slower you dispense the cream, the stronger the color. The color in each tip will last through a 14-ounce can of cream. After use, toss the tip.

If you're having a party or shower, the tips might be fun to use. Try them on fruits, drinks, cobblers, waffles, cookies, cakes, pies and more. But be forewarned, with aerosol cream, decorate just prior to serving so the cream doesn't end up deflated de·flate
